  • Fiddleheads

    The Little Whimsical Spring Herb

    When coming up with recipes one aspect I like to consider, is if the dish will be aesthetically pleasing. I wanted to highlight the beauty of the fiddlehead by putting it on display. I have sautéed Salmon and toped it with fiddleheads and done this with soups and salads, but this time I wanted to do something a little different.

     

    Picking and preparing fiddleheads is a tedious task, and you can easily be spending a couple of hours, scraping and washing off any shields or scales that often cover them. On a bright spring day, sometimes the day escapes me and I find I have little or no time to clean the fiddleheads before dinner.

     

    This dish makes me feel accomplished, because a handful of fiddleheads is enough for this dish (and I love the fact that this dish impressed my mother!) If you don't know my mom, you should know that she is a professional when it comes to baking breads and working with doughs. It is something my grandmother taught her, and it is something she continues to do to this day. Last year when visiting my parents in Yakutat, I threw together this bread to go along with dinner. Instantly my mom asked me for the recipe.

    Growing up in Alaska has developed in me a deep sense of the importance of being connected to earth, environment and community. Being personally motivated to grow in the knowledge of local plants for food, health and traditional uses, starting up Plant Guru seemed a perfect fit.

I recently moved to Alaska from Maryland in May of 2013. I have a passion for food and communities. I understand how integral these two are to our everyday lives.

    Arctic Chamomile Tea

    Get ready to relax, sip on a hot cup of Arctic Chamomile Tea

    Pineapple Weed: Can be picked in Northwest, Southeast Alaska, Yukon and down to California

     

    Pick and dry. Just like other teas, store in an airtight container. Simple as that! This herb helps soothe stomachaches, eases restless nights and has been known to be a nourishing tea for infants and mothers. 

     

    Herring Egg Salad w/Pickled Beach Asparagus

    Twist on a traditional dish of the Southeast Alaska Natives. 

    Hemlock: Found in South Central and Southeastern Alaska southward to California.

    Beach Asparagus & Black Seaweed: North American Pacific Coast, Southeast Alaska down to California.

     

     

    Herrings Eggs brought in on hemlock branches scream, "It is spring!" in Southeast Alaska.  Sea vegetables compliment fresh herring eggs creating delicious bites bursting with flavor. Try this salad as a side dish, or as the main course for your next meal.

     

    How to Harvest Bladderwrack

    Sea Vegetables make a highly nutritious snack. Skip the salt and add seaweed!

    Bladderwrack: Harvestable from the Bering Sea and Aleutian Islands, southward to California.

     

    Old man's firecrackers, pop weed or rock weed, whatever you want to call it, just don't over look it! Easy to harvest, just cut and dry. Use to thicken soups or beef up your trail mix. Bladderwrack is rich in iodine, magnesium, potassium, iron and complex B vitamins...just to name a few. 

     

    Sitka Spruce Tip Syrup

    Make this simple syrup that you can use on recipes throughout the year.

    Spruce Tips: Can be found in Alaska, Oregon and Northern California

     

    Making spruce tip syrup is a great way to preserve the summer flavors of spruce tips. When you are feeling the winter blues, pull out a jar and use on your pancakes or your salmon! Don't feel obligated to stop there just because we say, create your own uses for this tasty syrup.

     

    Spruce Tip & Cucumber Cocktail

    Refreshing early summer cocktail.

    Spruce Tips can be used in a wide variety of recipes. It was common to use spruce tips in tea, or even added to beer. I enjoy this quick cocktail, not only is it refreshing but it is an excellent source of vitamin C.

    Spruce Tip syrup engulfs salmon in sweet and citrus flavors.

    So many spruce tips, so little time! Here is another recipe you can use with spruce tip syrup. 

     

    Salmonberry Gummies

    If you are looking for a healthy alternative to gummy snacks, try this recipe. 

    Salmonberries: Found in the Pacific Northwest Coast

     

    Salmonberries are Yellow, Orange or Red when ripe. They are sweet and slightly tart, similar to a cherry in taste. The flowers and leaves can be used to make a delicious tea, but the berries are cherished and sought after when hanging ripe off their branches. Harvest time varies from year to year, but typically starts in early June.

     

    Deer Heart Greens w/Eggs & Mushrooms

    Quick & delicious breakfast using wild deer heart greens.

    Deer Heart Greens: Found in Southeast Alaska

     

    Deer heart greens are similar in taste to spinach, but a little hardier. The flavor for a wild green is mild and easy to incorporate in many dishes. Try this recipe to get you using these easy to get greens!

     

    Cold Salmonberry Pudding

    Simply healthy.

    Salmonberries: Picked in Southeast Alaska

     

    I grew up eating hot salmonberry pudding. This is a nice twist on a family favorite! Give yourself a kick of energy, vitamin C and omega fats with this easy recipe. Two cups Salmonberries,  two tablespoons chia seeds, 1 teaspoon vanilla and a little honey or sugar, mix and chill for four hours. Be prepared to be addicted!

     

    Grilled Salmon with Fresh Chanterelles

    Early fall mushrooms help create a savory wild dish.

    Chanterelles: Gathered in the rain forrest of Southeast, Alaska.

     

    Grilled salmon gets a savory kick with sautéed Chanterelles and beurre blanc. I enjoy serving this with fresh grilled vegetables and quinoa. 

     

    Blueberry & Huckleberry Jam

    Beautiful Blueberries or Huckleberries make beautiful jam! 

    Low Bush Blueberries, Alaska Red Huckleberries: Try using both berries to make a Bluckleberry jam!

     

    Theres nothing like fresh bread with homemade jam. Follow our simple to use recipe to make a batch or two of jam.
